Apple Crisp Cookies

  • 1 large egg

  • 1/4 cup of unsweetened applesauce

  • 1 tbsp of honey

  • 1/2 tsp ground cinnamon

  • 1 large apple diced

  • 1/2 cup of peanut butter (100% peanut butter with no additives*)

  • 2 cups of oatmeal flour

Icing

  • Peanut butter & honey mixed well and drizzled over cookies

Start by either mix by hand or use a stand mixer to blend egg, applesauce, honey, and diced apple until smooth. Next add ground cinnamon and peanut butter, and finally oatmeal flour. Mix until your dough forms a ball. If the dough remains sticky you can add some more oatmeal flour until the consistency is easy to roll. Finally, dust countertop with some oatmeal flour, roll to desired thickness and cut to shape!

Bake at 350 °F for approximately 5-8 minutes or until starting to turn a golden brown color.

One batch will make approximately half a standard size cookie jar.

Once cookies have cooled, mix and drizzle icing on top and let the official taste testers enjoy!

*Be sure to use only 100% peanut butter with no additives as Xylitol is added to some peanut butter brands as a sweetener which is toxic to dogs.
